Hey mate, check the version of max he is using, chances are its not one of the later ones. The newer method is much better, allows you to cut as you like, not having to go in and edit afterwards.

Make sure you're using the cut tool in Edit Poly mode. Edit Mesh's cut tool is absolutely, 100% awful

I'd say its more of a setback than a feature. True it might make it more difficult to follow the tutorial, but I assure you it is much much way handier.
