I've been really wanting to understand exactly what an output map for materials does...Sorry if its a really dumb question...I have searched Max's Help and a few forums with no luck...max help says "
After applying a map and setting its internal parameters, you can adjust its output parameters to determine the final appearance of the map."
Can anyone spare a quick few tips?

hi animare,
i'm not a pro in output-maps but....
what i know, it multiplies the effect of the channel you apply it to...i.e self-illumination...
here are some pics, rendered in vray...simple, but i hope it'll help
they show a simple sphere on a plane, the sphere has an output-map applied into the selfillumination-slot...
1st.
this one shows the rgb-level in output-params set to 1 (same as if you don't have any output-map applied)
2nd.
rgb-level set to 2
3rd.
rgb-level set to 5

Pretty much you can just use it as a filter to change the values of the map underneath. Like, you can invert it and multiply the values of the sub map with the rgb and output value and adjust the curve and all that... It's very handy. I use it a fair bit to increase the brightness of reflections + refractions + fogginess.
