At this point, you might be better off waiting to build a box for a little bit. I got my machine that I run windows on built for about $2200.00 and I have a terrabyte raid 1, amdX2 4400, 2g pc3600 Dual 7800 gt cards with sli (because I like to game a bit as well) and an asus A8n motherboard to hold it all down. This one runs windows.
On my Linux box I have the same specs sans the SLI setup. The big difference is that It runs a 64 bit OS that is pretty much alot faster, especially with maya 8 and mental ray standalone having 64 bit support. And it runs 4 gigs of ram instead of 2, and actually uses it.
Having worked with a mac extensively using maya, I can honestly say don't do it. They have some serious bugs they need to work out, and you will end up doing more cursing and complaining than it's worth. If you want to do the unix thing, get a unix or linux machine for maya. Mac's are great for video and photoshop and flash, and that type of stuff.
With all that being said, I would wait until vista comes out, buy a 64 bit os, and have all your stuff spec'd out with a quad core proc and some mean video card, plenty of ram, storage, and you should be good to go. If you can't wait, I would suggest looking into linux for now, keeping your files on an external HD, and that way when vista comes out, you can just buy that instead of an expensive copy of a sinking ship.
